What’s For Dinner? Mini Chicken Pot Pies
I don’t know about you but I get really tired of the “what’s for dinner?” question. ” I don’t know, I don’t really want to think about it so go find something” is usually my response. However, I need to cook at home more so I’ve found a great tool to help out; it’s called the internet!
I have found some really great, easy, fast recipes online. Some I get from allrecipes.com but lately I’ve found some on pinterest. Pinterest is where I found the recipe I tried tonight. I found it last night and it looked so easy and sounded so good I had to try it.
They are mini chicken pot pies or also called chicken pot pie cupcakes. They were so easy and really good. They would be really good in the winter months, but I like pot pies anytime of year.
Here are all my ingredients (plus salt and pepper). Not much to it at all plus I cheated a little bit, I used canned chicken instead of having to cook the breast myself. I also doubled the recipe.
Dump it all into a bowl and mix it up!
Open up your can of biscuits and place them in the cupcake tin.
Spoon your filling into the biscuits. Then bake for about 15 minutes at 400 degrees.
And there you go they are ready to eat.
I have to say these were delicious and between prep time and cooking I was out of the kitchen in about 30 minutes. By the way the kid loved them so that’s all the approval I needed to add this to my recipe box, they will be made again!!
