Fiesta Bubble Bread – Shay’s Recipe of the Week
I like easy recipes and I'm sure you do as well. This one is almost like a dump recipe where you basically just dump it all into a Bundt pan and bake. It's delicious, spicy and smells wonderful when baking. It's called Fiesta Bubble Bread or what I like to call Cheesy Jalapeno Bread.
I found this recipe on Facebook but a Google search brings up the same recipe from many sources. It has only 6 ingredients and takes about 30 minutes to bake, so if you need something quick, go for this.
Ingredients:
- 1 stick (1/2 c.) melted butter
- 1-1/2 c. shredded Mexican Blend cheese
- 1/4 c. shredded Mozzarella cheese
- 10 oz. jar sliced and drained jalapenos
- 1 t. dried parsley
- 2- 12 oz. cans biscuits cut into quarters
Grab a large bowl and combine all your ingredients making sure your biscuits are coated well. Note: make sure your biscuits are cold not room temp or they will stick together (like mine did).
Spread into a Bundt pan and place in a preheated oven at 350 degrees for about 30 minutes or until the biscuits are a golden brown.
Let sit for about 5 minutes, place on a plate and serve it warm. OMG this is delicious.
I do have a few suggestions that I will be using the next time I make this. First I will chop my jalapenos, I didn't like having the large slices in the bread. I will also use fewer jalapenos, which is definitely something you can do to suit your taste. I think I will also add green chilies, maybe do a half and half between the green chilies and jalapenos. That would give it the flavor without the heat. This is just something I have to think about because I have a kid who doesn't like overly spicy and myself who suffers from major heartburn!
