This weekend I found a most sinful recipe and had to try it. It's called Rolo Cheesecake Bars and it is so good it will make you slap your grandma; a little something my grandparents used to say. I've included some photos and the recipe so you too can slap your grandma (however, we do not condone violence so please don't really do that).

There are three parts to this recipe and here is what you will need for each layer.

Crust:

  • 3 cups of crushed graham crackers
  • 1 cup sugar
  • 2 sticks melted butter (that is 16 Tbs.)

Filling:

  • 2 8oz. pkgs. cream cheese (softened)
  • 2 eggs
  • 1 cup sugar
  • 1/4 cup flour
  • 1 package of mini Rolos

Glaze:

  • 1 stick butter
  • 6 oz. chocolate chips
  • 4 tsp. light corn syrup

Now here is what you do with all that!

For the crust mix together all ingredients and press into a 9x13 pan (I sprayed mine with Pam) and Bake at 350 for 7-10 minutes and let cool.

For the filling beat the cream cheese, eggs, sugar, and flour until smooth and then stir in your package of mini Rolos. Pour onto your crust and return to oven and bake again at 350 for about 30-35 minutes. It should be a light/golden brown. Remove and let cool.

Now add your chocolate glaze. Melt your butter and chocolate chips and stir until smooth then add in your 4 tsp of corn syrup. Pour this over your cooled bars and let chill.

Once they have chilled cut into squares and serve!!

I have to admit that I have a problem with patience so of course mine hadn't completely chilled when I decided I needed to try one. It was good but once I let them get really cold they were most incredibly awesome. For a little extra presentation you can add a Rolo on top before you serve.
