I had seen this recipe floating around Facebook and they looked so cute, finally I decided to read the recipe. It sounded pretty simple, something I always like, and sounded really good. I decided this past weekend to give it a try and see how they turned out. They tasted great, like little apple pie bites, and were pretty easy to make. So here is the recipe I suggest for your next party or get together you make these. Everyone will love them and they look harder than they really are...but no one has to know that!

Ingredients:

  • 1 red apple
  • 1 cup flour
  • 2 Tbs. sugar
  • 1 Tbs. honey
  • 3 Tbs. water
  • 1/2 stick butter

Cut your apple in half and core it, then cut into very thin slices. Put into a pot along with the sugar, honey and water. And let cook on medium heat for about 5 minutes. Remove from heat and let cool. (Save the apple stock)

In a small bowl mix together your flour, butter and 3 Tbs. of your apple stock from the cooked apples. This will make your dough. Separate the dough into 2 halves and roll out each half. You will then cut the dough into about 8 inch strips at about 1/8 in. thick.

Place your cooled apple slices on the dough overlapping them just slightly...you will use about 5 slices, give or take a couple. Then roll the dough from end to end and place in a cupcake paper. Place in a cupcake tin and bake at 350 for about 15 minutes. (I sprinkled a little cinnamon on top of mine before baking)

These are so good. As I mentioned they taste like little bites of apple pie. They would be perfect to add to a scoop of ice cream too!
